Production

At FABBRICA, you can watch the production process with total transparency. During the year, the producers in the Consortium take turns in bringing their own personal recipes, because each Mortadella is unique.

At the factory you can watch the most important phases of the production process: stuffing, tying, cooking and showering.

The meats used are carefully selected, ground and mixed with cubes of fat, spices and natural flavourings. The mixture is then stuffed into casings and cooked in special dry-air heaters for several hours, depending on the weight; this is the most delicate phase, which gives Mortadella Bologna PGI its flavour and softness. The last phase is showering with cold water and chilling. All this, combined with carefully selected and high quality raw ingredients, makes Mortadella Bologna PGI a truly unique product!
